Create a chef inspired meal with the round French oven from the Signature line by Le Creuset. Made from enameled cast iron, each piece passes through the hands of 15 skilled artisans to ensure flawless perfection with key advances that make cooking and serving even more comfortable and convenient. The color Provence is inspired by the lavender fields of the Provence region in the South of France. While the Signature line may look much like its Classic counterpart, the range includes newly engineered lids, enhanced handles, and an advanced interior enamel. The lids have been given an improved heat resistance with newly designed, ergonomic knobs that can withstand heat up to 500 degrees Fahrenheit. The natural, sure grip that is provided with the larger knob size works hand-in-hand with the built-in lid stabilizers that help seal in flavor with a more secure fit. To further enhance comfort and stability, the Signature line features up to 45 percent larger handles making them easy to grip even when wearing bulky oven mitts. The enhanced smooth sand-colored interior enamel has been specifically designed to resist staining and dulling over the life of the cookware, as well as to make the piece easy to clean and great for presentation at the table. Even better, this French oven is backed by a manufacturer’s limited lifetime warranty.

Product Description
Long appreciated as both a cooking and serving dish, the terrine was traditionally used to compact a forcemeat mixture like pâté (resulting form is also referred to as a terrine). Some terrines include a weighted press that molds the mixture from all sides. As the meat cools, the fat contained within it begins to set, helping the terrine hold its form. Drawn from early Le Creuset designs from the 1930s and 1940s, this cast-iron pate terrine also works well for baking cakes, breads, and lasagna, or for assembling a frozen dessert of sponge cake and ice-cream layers. The elongated rectangular-shaped dish measures 4 by 12-2/3 inches and can hold up to 1-1/2 quarts.
Like other pieces in Le Creuset’s line of enameled cast iron, the cookware’s exterior features a colorful, long-lasting enamel that resists chipping and cracking, while its durable, nonreactive sand-colored enamel interior offers a smooth surface for cooking and an optimal palette for food presentation. As cast iron is unexcelled for even heat distribution and superior heat retention, and enamel is impervious to acids and odors, the dish cooks food uniformly and gently without hot spots and can be used for marinating, cooking on the stovetop, or finishing in the oven. The cookware also provides traditional scalloped side handles for a secure grip during transport and a tight-fitting handled lid, which helps keep food hot or cold until served. The cookware can be safely used at any oven temperature, under the broiler, and on any stovetop, including induction. Best of all, it moves gracefully from the oven to the table for serving to the refrigerator or freezer for storing leftovers. The cookware carries a lifetime limited warranty and should be hand washed for best results.

Because pâtés require gentle, even heat, an enameled cast-iron pan like this one is essential for properly cooking them with or without a water bath. They can also be chilled in the pan before unmolding, or they can be served directly from the pan. Classically shaped, the pan measures 12-1/2 inches long, and its interior is 3-1/8 inches wide and 2-1/4 inches deep. That shape and size also suits many other dishes, such as pretty breads, meatloaf, cakes, and deep-dish savory pies. (Recipes included.) For pâtés, the pan’s heavy, tight- fitting lid has a tiny vent for steam to escape. Because the terrine’s enamel coating is impervious to acids and odors, it can be used for marinating. It’s also dishwasher-safe. Like all Le Creuset cast-iron cookware, this pan is hand cast in a one-of-a-kind sand mold and hand finished at the Le Creuset factory in France. It carries a lifetime warranty against defects. –Fred Brack

Enameled cast iron is a remarkable and robust material that performs well with modern requirements for food preparation and cooking. Whether you choose to stir-fry, slow-cook a casserole, sear a steak or bake a cake, there is a shape that is suitable. Cast iron performs well for either slow cooking or high-temperature searing.
Cast iron can be used reliably on any heat source, including induction, and with any oven or grill. It has the ability to retain heat efficiently, which allows for use of lower heat settings in stovetop and oven cooking. On the table, a hot covered dish will keep food hot for second servings.
Cast iron can also be used to keep foods cold. A chilled dish becomes an ideal cold food server on a hot summer day. It can also be placed in the freezer for food storage or advanced food preparation
High heat temperatures should only be used for boiling water for vegetables or pasta, or for reducing the consistency of stocks or sauces. High heats should never be used to preheat a pan before lowering the heat for cooking. Cast iron retains heat so efficiently that overheating will cause food to burn or stick.
The vitreous enamel surface is impermeable and therefore ideal for raw or cooked food storage, and for marinating with acidic ingredients such as wine.

Cooking tips for shallow frying and sauteing:
For frying and sauteing, the fat should be hot before adding food. Bring the pan and fat or oil to the correct temperature together. Oil is hot enough when there is a gentle ripple in its surface. For butter and other fats, bubbling or foaming indicates the correct temperature. If either begins smoking, or if butter begins browning, it is too hot and should be cooled slightly before proceeding. The quickest way to do this is to remove the pan from the heat source for a few moments. For longer shallow frying a mixture of oil and butter gives excellent results.
